I have no personal experience with Plausible, but I am happy to see, there is an opensource alternative outside GA.
GA is more than just a collection of data of usage, It's a part of Google's ecosystem. If you want to advertise something (not just collecting data), the data of your website will be a part of your entire data collection, supporting your business. If you want to provide native privacy for your visitors, and you don't care the information that would have been generated on you domain, than Plausible could be a good alternative (according to this post).
